Aloo Puri is a delicious Indian breakfast bread people have during breakfast, making a complete meal. It is also served as a snack at any time of the day.

Understanding the Indian Bread in its Modern Version

Aloo puri has a long history and is known to have come from India. The Mughal Empire, renowned for its love of food, is thought to have developed the dish in its original form. The Mughals were renowned for blending various ingredients and spices to produce distinctive flavours and cuisine.

One of the dishes created is supposed to have been Aloo puri. Since then, it has spread to other regions of India, making it popular in different parts of the world. It is a quick and delectable meal suitable for any time of the day. Nevertheless, Manish Mehrotra introduces aloo puri in a new flavour – a modern twist from a traditional flavour.

He is the head chef at Indian Accent, which has been included as one of the best restaurants in India continuously for two years on Asia’s top 50 restaurants list. It scored over some iconic dining establishments in major Indian cities like Delhi and Mumbai in a short period.

Having been residing and working in New York since last December, Mehrotra plans to create a second location there. Mehrotra is eager to bring Indian flavours in a contemporary setting in a city, which has foods from every country finding representation. Many of his signature dishes like chur chur parantha and dal moradabadi, potato sphere chaat, and white peas mash are popular among New Yorkers, who are known to try any modern dish he offers.

We wanted to offer his customers a flavour of the Indian Accent to know what Indian cuisine is in the inaugural menu in New York. One of the well-known dishes on the Indian food menu is aloo puri, and he has made a modern version of it. The majority of his meals are distinguishably modern, a fusion of vibrant hues, flavours, and textures to get your attention.

Recipe of Aloo Puri – A Distinctly Modern One

The delectable Indian bread called aloo puri is prepared by combining whole wheat flour, spices, and boiled potatoes. According to Mehrotra, the modern form of the dish is made using the ingredients explained hereunder.

For Aloo Puri:

  • Whole wheat flour (To make the puris crispy, you can add some semolina or sooji)
  • Boiled potatoes, which are peeled and mashed
  • Spices like red chilli flakes, carom seeds (ajwain), and cumin seeds
  • Salt
  • Hot water
  • Coriander leaves
  • Vegetable oil

For Sweet and Sour Pumpkin Chutney:

  • Pumpkin – peeled and diced
  • Fennel seeds
  • Cumin seeds
  • Fenugreek seeds
  • Spices powder – Coriander powder, red chilli powder, and turmeric powder
  • Green chillies – chopped
  • Ginger
  • Dry mango powder
  • Asafoetida (as required)
  • Water
  • Salt

For Potato Curry:

  • Potatoes – Boiled and mashed
  • Tomato sauce
  • Coconut milk

  • Coriander powder
  • Turmeric powder

  • Salt

All the ingredients of aloo puri are mixed and kneaded thoroughly to make a dough. Later, the dough is divided into small balls and rolled to flatten the balls. The flattened dough pieces are deep-fried in the hot oil until they are puffed and become brown.

Various Types of Aloo Puri

Depending on the location and personal preferences, you can find aloo puri prepared in numerous ways. Nevertheless, the most popular variant is made with flour, boiled potatoes, various spices, and fried onions. The other variation of this dish is adding spices like cumin seeds and garam masala and vegetables like cauliflower or peas. For a tangy flavour, some places in India add tamarind chutney or yoghurt with the mixture explained above.

Boiled potatoes are peeled, mashed, and blended with spices for a tasty and spicy filling. The potato mixture is then stuffed into the puri, which is subsequently deep-fried. The end product is a filling meal that is tasty, crispy, and savoury.

Nevertheless, boiled potatoes are typically used to make aloo puri, there are numerous more ways to prepare the meal. For a sweeter flavour, you may, for instance, substitute boiled sweet potatoes for normal potatoes. If you are looking for a healthier and more nutritious meal, you can add more vegetables like bell peppers, carrots, and peas to the potato combination. To make it a little spicier, you can add other spices and chilli powder.

What Is So Unique About the Indian Bread Made with Global Influences?

Leading chefs and restaurant owners have been presenting Indian cuisine in a different way over the past several years. Many people tried and successfully brought fusion cooking to Indian food, which has since been advanced through progressive cuisine.

Progressive cuisine, a more recent idea, emphasises the historic elements of a region’s cuisine by employing international inspirations, contemporary cooking methods, and ways of presentation to show the food in a brand-new form while maintaining its traditional flavour.

Manish Mehrotra is a leading chef in the world, who can assert to have created an entire school of cooking. He had a different viewpoint on Indian food. By then, contemporary Indian chefs had refined their presentation. In place of that approach, Mehrotra developed his own fresh, flavourful dishes that helped make the Indian Accent popular in the world.

He has a great deal of pride in Indian cuisine and works hard to keep its heritage while modernising and reintroducing it, like the modern Indian breakfast bread (aloo puri), to the world.
