- Chop all of the veggies in a small dice, close to the size of a bean.
- Fell free to change out the beans or peppers to other varieties you prefer.
- This recipe for cowboy caviar uses canned beans to keep it extra easy. You can also cook dried beans to use instead.
- Fresh corn cut off the cob tastes best, but frozen corn works too. Simply defrost before using so no extra moisture is added.

- ¾ cup chopped red onion

- ¼ cup chopped cilantro
- ½ -1 jalapeno chopped
Dressing:
- ¼ cup olive oil use broth if oil free
- 3 tablespoons fresh lime juice
- 4 teaspoons honey or maple syrup
- 1- 1 ½ teaspoon sea salt
