How to Prepare Cookies in Advance

This oat flour cookie recipe can be made ahead of time!

  1. Mix the dough as directed.
  2. Form into 24 evenly sized balls.
  3. Seal in a Rubbermaid EasyFindLids storage container.
  4. Freeze cookie dough balls for up to 3 months.
  5. Bake as few or as many at a time as you like!

How To Make Oatmeal Flour

When baking with oat flour it is easiest to purchase store bought oat flour. However, it is possible to make your own if you have a high speed blender!

  • Add oats to the blender.
  • Blend on high until the oats are pulverized into flour.
  • Check for any chunks and keep blending until they’re gone.
  • Store in a Rubbermaid storage container with the EasyFindLids System™ in the pantry for up to 1 year.
  • Make sure to measure your oat flour after it has been blended.

  • Making cookies with oat flour is easy as long as you use the right ingredients. If you stray from this recipe if will change the end result.

  • 1 ¾ cup oat flour
  • 2 tablespoons tapioca flour
  • 2 teaspoons baking soda
  • ¼ teaspoon sea salt
  • ½ cup softened butter , dairy free if needed
  • ½ cup cane sugar
  • ½ cup brown sugar
  • 3 tablespoons unsweetened apple sauce
  • 1 tablespoons apple cider vinegar
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips or chunks , dairy free if needed

Instructions 

  • Preheat oven to 350 F/ 175 C.

  • Put flours, baking soda, and salt in a bowl. Whisk well to remove clumps and combine.

  • In another bowl, add softened butter and sugars. Beat with a hand or stand mixer until fluffy.

  • Add apple sauce, vinegar and vanilla. Beat again until mixed.

  • Add in the flour mixture as you mix and continue to mix until it is combined well.

  • Fold in the chocolate chips.

  • Add spoonfuls onto a parchment lined cookie sheet.

  • Bake for 13 minutes, until golden.

  • Cool so they don’t fall apart and enjoy!

  • This recipe was tested with the ingredients above, any substitutions will change the texture and end result.
  • You will get 24 cookies if your cookie dough balls are about a tablespoon in size.
