We’ve got FIVE recipes this week (we’re feeling generous), which include two breakfast items (or breakfast-like) with Pancake Bread and Sweet Potato Hashbrown Waffles which are exactly what you think they are and will change your life! We give you more sweet potato love with chicken poppers. Other dinner magic includes Buffalo Chicken Stuffed Sweet Potatoes and Bacon-Wrapped Potato Wedges. (Somehow, this week became all about the potatoes!)

NOTE: Meal Prep Menu 2023: week 25 is designed to give you ideas. We aren’t about to tell you how many calories you should consume every day. (In fact, we don’t really like the word “should.”) Please calculate your macros HERE and then adjust the menu items’ portion sizes as needed.

How to customize:
- Sweet Potato Hashbrown Waffles
- Use Just Egg for the waffles and sides to make this vegan-friendly.
- Any kind of potato can be subbed for the sweet potato.
- Use your favorite seasoning in place of the paleo powder.
- Sweet Potato Chicken Poppers
- Use a drained can of chickpeas in place of turkey for a vegan swap.
- Any potato can be used.
- Swap the paleo powder for breadcrumbs or oats.
- Buffalo Chicken Stuffed Sweet Potatoes
- Use tofu in place of chicken for a vegan swap. Also, use dairy-free butter, mayo, and ranch. You can get these from Primal Kitchen.
- Any kind of potato will work.
- If you don’t like Buffalo sauce, swap it for BBQ sauce.
- Bacon-Wrapped Potato Wedges
- Use vegan bacon and ranch for this recipe to make it dairy-free.
- Use any kind of potato.
- Pancake Bread
- We haven’t tried a vegan version of this. If you give it a go, let me know!
- Oat flour can be subbed for regular flour (not whole wheat)
- Use any kind of milk.
