We love build your own meals around here, because they are obviously delicious, but they also cut down on all the dinner tantrums. Flavors like my macro bowl and taco bowl are big hits, so I know I needed more!

Ingredients

The flavors in the Chipotle veggie burrito bowl are amazing, but you’re limited to their serving sizes, and everything good is “extra”. Well, if you make your own burrito bowls at home you are in full control!

The following ingredients are simply guidelines, feel free to adjust to fit your needs and preferences:

This version of the Chipotle veggie bowl seriously could not be more easy to make! Hot tip: use a large, shallow bowl so you get a little bit of everything in every bite!

Here’s what to do:

Instructions 

  • Build the burrito bowls by putting the ¾ cup lettuce, ½ cup rice, and ½ cup carnitas, ¼ cup beans and ¼ cup fajita veggies at the bottom of each bowl.

    3 cups shredded lettuce, 2 cups Cilantro Lime Rice, 2 cups Vegan Carnitas, 1 cup black beans, 1 cup fajita veggies

  • Top with ¼ cup guacamole, ¼ cup corn salad, and ¼ cup salsa. Add any other garnishes you prefer!
